I learned that the cookie ingredients are fickle and must be mixed just so by the mixer. 

Turning your mixer on and off affects the final texture of your cookie.

The most important thing to remember is not to over-mix your flour!

The more you mix the gluten, the more challenging the cookie will be. 

You want tender cookies.

Over time, this process of mixing cookies becomes innate, and you can “see” what needs to be done.
